2 medium zucchinis

Instructions:
Prepare the Zucchini:
Wash and slice the zucchinis into thin rounds (about 1/4 inch thick). You can also cut them into sticks or wedges depending on your preference.
Season the Zucchini:
In a large bowl, toss the zucchini slices with olive oil, garlic powder, Italian seasoning, salt, and pepper.
Coat (Optional for Crispiness):
If using Parmesan and breadcrumbs, combine them in a shallow dish. Press each zucchini slice into the mixture to coat both sides lightly.
Preheat the Air Fryer:
Preheat the air fryer to 400°F (200°C) for 2–3 minutes.
Cook:
Place the zucchini slices in a single layer in the air fryer basket. Don’t overcrowd — cook in batches if needed.
Air fry at 400°F (200°C) for 8–10 minutes, flipping halfway through until golden and crispy.
Serve:
Remove from the air fryer and serve immediately. They’re perfect on their own or with a dip like ranch, marinara, or garlic aioli!
Tips:
For a low-carb version, skip the breadcrumbs and just use Parmesan cheese for the coating.
Want more flavor? Add paprika, chili powder, or lemon zest to the seasoning mix.
Leftovers can be stored in the fridge and reheated in the air fryer to crisp them up again.
