Air Fryer Rack of Lamb Recipe
Ingredients:
1 rack of lamb (about 1.5 to 2 lbs), frenched
2 tablespoons olive oil
3 garlic cloves, minced
1 tablespoon fresh rosemary (or 1 tsp dried)
1 tablespoon fresh thyme (or 1 tsp dried)
1 teaspoon salt
½ teaspoon black pepper
Optional: 1 teaspoon Dijon mustard for added flavor

Instructions:
Prepare the Lamb:
Pat the rack of lamb dry with paper towels. Trim excess fat if needed.
Make the Marinade:
In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper (and mustard if using). Rub the mixture generously over the entire rack of lamb. Let it marinate for 15–30 minutes at room temperature (or refrigerate up to 4 hours, then bring to room temp before cooking).
Preheat the Air Fryer:
Preheat your air fryer to 380°F (193°C) for 3–5 minutes.
Cook the Lamb:
Place the rack bone-side down in the air fryer basket.
Air fry at 380°F for 15–20 minutes for medium-rare (internal temp 125–130°F), or longer for desired doneness. Flip halfway through for even cooking.
Rest Before Serving:
Let the lamb rest for 5–10 minutes after cooking to allow the juices to redistribute.
Slice and Serve:
Slice between the bones into individual chops and serve with your favorite sides like roasted vegetables or mashed potatoes.
