Single Induction Cooktop Testing

Product Manager Leo conducted several tests on the Ciarra Gadget Induction Cooktop to assess its usability and performance.

His test book records that:

Flour Heat Distribution Test:  To evaluate heat distribution, I sprinkled a tablespoon of flour evenly over the surface of a large stainless steel frying pan, setting the heat to medium (using the highest setting available). Without stirring or moving the pan, I observed where the flour browned, marking the hottest areas on the cooktop.

Boiling Water Test: I measured the time it took for each induction cooktop to boil a gallon of room-temperature water in a 4.5-quart Dutch oven. For cooktops with a preset boiling setting, I used that preset; otherwise, I used the maximum power. Note: I live in a high-altitude area (Denver), so my water boils at around 202°F (about 90°C). I used a probe thermometer for accuracy.

Heat Stability Test: After boiling the water, I turned the heat down to a low simmer to test the heat stability of the cooktop. I attempted to find the right temperature setting to maintain the water between 185 and 195°F (for simmering at my altitude) and tracked the fluctuations in temperature over an hour.

Scrambled Eggs (Low Heat) Test: Using a medium-sized non-stick pan, I cooked a batch of scrambled eggs on each cooktop, evaluating how easily I could adjust the heat to a medium-low setting (using the highest possible heat). I also tested the responsiveness of the controls and the performance of the cooktop.

Pan-Seared Chicken Breast Test: On the best-performing cooktop, I seared two chicken breasts on medium-high heat to test the convenience of cooking and adjust as necessary. I observed the evenness of the searing and whether the edges cooked thoroughly.

Onion Ring Test: I used the best-performing cooktop to fry onion rings. I recorded the time it took for the oil to reach 375°F (about 175°C) and noted how well the cooktop maintained that temperature as I added the battered onion rings.

Cleaning and Usability Test: Throughout all tests, I focused on the ease of use of the cooktop, the intuitiveness of the heat settings, and the ease of cleaning. I also paid attention to the durability of the cooktop and whether any marks or scratches appeared during use.

What We Learned

How Does Induction Work?

Induction heating works by passing current through a coil (usually copper), creating a magnetic field. On an induction cooktop, the coil is placed beneath the glass surface, which serves as the cooktop surface. When compatible cookware is placed on the cooktop, the electromagnetic energy induces a current inside the cookware, causing atomic vibrations within the metal. This friction generates heat, which in turn heats the food inside the cookware.

The burners do not generate heat directly; they only generate an electromagnetic field. All the heat is produced by the cookware, which must be ferromagnetic for the process to occur (in other words, compatible cookware must contain iron and attract magnets). Cast iron (including enameled cast iron, like most Dutch ovens), carbon steel, and magnetic stainless steel pots are excellent companions for induction cooktops.
